Big Burger Ballyhoo 2007 : Tofu Burger
I'm not really a hamburger connoisseur, but I've suddenly developed an urge to sink my teeth into a big, juicy burger with all the works after watching "Pink Panther", particularly this scene. Could this be a conspiracy by the hamburger industry to transform us into hamburger - chomping - special - sauce - dripping - from - the - sides - of - our - mouths junkies ?!? Haha ... no I'm not crazy. You know how when you have a song stuck in repeat mode in your head? In my case, it was that scene as I was whipping up this recipe for the Big Burger Ballyhoo 2007. Even as I was grinding the ingredients for my entry, I swear I could hear the food processor yelling, "I WOULD LIKE A HAMBURGER !" with a french accent each time I hit the pulse button.
For this burger recipe, I'll be going the m00-friendly route with a healthy hand-crafted meatless Tofu Burger variation. Instead of regular tofu, I've chosen to use Chinese baked tofu. They have a firmer texture than regular tofu and are available in two varieties: plain white pressed tofu and seasoned brown five-spice tofu. I went with the latter. Its convenient and I can use the leftovers in a cucumber tofu salad or a snack later.
As for the buns, I cut a few slices of multi-grain bread into 3-1/2 inch rounds, pan-fried them lightly with a dash of olive oil and added a sprinkle of toasted sesame seeds. Yummy ... I'm definitely saving some to make canapes later :)
Back to the tofu burgers, I have decided to pan-fry them but by all means, go crazy with the barbeque. These tofu burgers are definitely grill-friendly. I browned a couple of these tofu patties to a golden perfection, and smothered over some pan-fried crunchy sweet sugar snap peas, sliced button mushrooms and fresh cut cucumbers. I don't know if there's a magic dressing for a tofu burger, but a spread of my Spicy Pesto Sauce mixed with honey dijon mustard and my taste buds are ready to do the Conga :)

Tofu Burger Recipe ( for 2 patties )
Tofu Burger Recipe ( for 2 patties )
Ingredients :
4 blocks baked five-spice tofu squares, cut into 4 quarters
( each block is 2x2 inches and 1/2 an inch thick )
1 tbsp chopped green onions
1 tbsp minced ginger
1 tsp Worcestershire sauce
1 tbsp Sweet Chili Sauce ( I used a Thai brand : Mae Ploy )
2/3 cups dry breadcrumbs
1 egg
2 tsp sesame oil
black pepper, salt and sugar to taste
Method :
1) Blend all ingredients ( except breadcrumbs ) in a food processor until a smooth texture is formed.
2) Pour mixture into a large bowl. Add breadcrumbs and mix well.
3) Refrigerate for 15 minutes. Shape mixture into 2 patties. Freeze the tofu patties for 5 minutes.
4) Place patties on skillet or grill ( oiled ) and cook for 3 minutes on each side until browned.
Burger Buns :
4 slices of multi-grain bread, cut into 3-1/2 inch rounds, lightly pan-fried with a dash of olive oil with a sprinkle of toasted sesame seeds ( or use regular burger buns )
Burger Dressing :
Spicy Pesto Sauce
Honey Dijon Mustard
Paprika
Cayenne Pepper
Note : Regular firm tofu may be substituted if five-spice tofu is unavailable. An alternative to sweet chili sauce is Asian Teriyaki Glaze or Sauce. It will then be a Teriyaki Tofu Burger :)

Hello meltingwok, I've been checking out your blog off and on for a while now, I love it! I am a fellow Malaysian and as you know we are all food snobs :-) so it takes a lot to impress me, but damn, woman, you're GOOOOOOD! Doing our fine nation proud ;-) .
I am itching to try out this tofu burger recipe but I don't have a food processor right now. Do you think I could make it by hand? I know it will take more time & energy, but still possible, right, if I make sure to crumble/mash up the tofu finely?
Yum Yum... :)
Beautiful.My daughter loves Tofu:)
Bet d 'moo' factor won't be missed at all!
This may a difficult challenge as I will have to season my own tofu or make my own. I have been wanting to make home made tofu for a while now and this is the perfect excuse.
I've long embraced the power of soy in all forms and don't understand people who devalue it. I know my heart will be grateful too!
Thanks for the submission and good luck!
This looks truly yummy! I love how you cut the bread. The peas and shrooms all look so scrumptious. Haven't had tofu in a while, so I should give this a go.

babekl, I can't believe its butter, I can't believe its tofu, yeah ?:)
freya & paul, I hope you try it out :) I believe you can use "firm" tofu and season them with chinese five spice, if not, just use plain tofu with your favorite herbs and spices and add a touch of the sweet chili sauce is perfect :)
ll, if you see Ramly do this, let me know, they need to pay ma royalty fee heheehe :)
valentina, yes, sink them deep, sink them hard, after all, it's tofu, tasty, juicy and healthy :)

Cynthia, thx, you bet it is :)
pom d'api, merci !:)
cheesewithaspoon, thx for dropping in and to your kind comments :) Doesn't this remind us of the not so recent news on how M'sians over consume foods with high saturated fats, sugar, and milk like in the teh tarik and coconut curries ? hehe :) Anyway, back to your tofu question, my mom used to mash them up with her favorite ingredients, steamed, let it cool, cut them into patties, store them into the freezer, and use them for later, ie. in a grill, pan-fry, or deep-fry, if you like. Your method is definitely a go :)
jayce, thx, yum2 it is :)
Asha, thx, I'm sure she and your family will enjoy it :)
tummy, doctor says, take it once, and you'll be cured for life from the moo-factor haha :)

freya & paul, I'm glad you're together with me on this. Thx again for having me, and I hope I'll be hearing some goat slicks sometime soon ? hehe :)
Susan, yeah, I didn't realise how the sugar snap peas went with the burger, it was in season, I tried it, and they complemented the tofu burger perfectly :)
wmw, you're right on that, the other white meat to the other white meat -pork- :)
sher, thx !:)
ECL, yeah, another easy one. haha..you gonna deprive him of his meat ? :P
jackson, its very easy, get ya lazy bones up and make mommy dearest some tofu burgers now !:P
Amy, thx, I really liked how the springy mushrooms and the crunchy snap peas went between the crispy bread and the tofu burger :)
Love that you posted a tofu burger recipe. Two questions:
For vegetarians or vegans worcestershire sauce is a no-no (anchovies.) Would you recommend soy sauce or tamari as a substitute, or something else?
For vegans the egg would be off-limits, can you recommend a substitute there? I assume the egg is just to hold it together, so you could use egg replacer, don't you think?
If anyone wants to serve this to their veg*n friends, just bear the above in mind, and they will love you forever!
Thanks again.
elisa, Hi there, thanks for dropping in :) Good question, I'll try to make some other tofu burgers for the vegan/vegetarian fans sometime :) A good worcestershire sauce replacement would be a low sodium soy sauce or some mushroom soy flavored soy sauce :) Perhaps adding a touch of chili tamarind paste would be great too :) As for the egg replacer, I would suggest using cornstarch, soy flour, tapioca starch, or potato starch. It'll definitely hold the tofu burger better, I'm sure. If you can find five spiced tofu (like the one I've used for this recipe), you do not need much egg replacer, since the texture of the five spiced tofu is more dense and firm than the regular firm tofu. This will definitely be as delicious and a yes-yes for the vegetarian / vegan friends :) Hope you give it a try, and let me know how it goes :)
